Cassava Cake ala Eric

Hubby found a cassava at a local grocery store here last Saturday. From the way his voice sounded, I thought he found a gold mine. LOL! Just kidding, Hon!

But seriously, it is so rare that we get to find a cassava in a grocery store.

We bought two medium sized cassava. We paid $0.50 for it. When we got home, hubby went to work right away. He's been telling me he knows how to make a cassava "suman". But since we did not have banana leaf, he's making a cassava cake instead.

He grated 1 medium sized cassava, mixed it with two tablespoons brown sugar (we don't want it to be too sweet), 1/4 cup fresh milk, 4 tablespoons water and then put it in a tin.

We then put it in the oven without cover and baked it for about 25 minutes. Just before it's done, we put a sliced cheddar cheese on top.

It was a little dry but it tasted good. I think we know what to do next time. We should put a foil for cover.

If you have a sweet tooth, I suggest you put more sugar. But otherwise, this recipe produced good result.
